Super Bowl Special: Sausage Mushroom Caps


Rinse 24 medium-size button or cremini mushrooms (about 1 lb. total). Trim stems; save for another use.

Mix 1/3 lb. seasoned bulkpork sausage with 3 tbsp. seasoned dried bread crumbs. Mound sausage mixture in mushrooms, then set, filled side up, in a rimmed 10- by 15-in. baking pan.

Broil 6 to 7 in. from heat until sausage is well browned, about 5 minutes. Lift mushrooms onto a platter, brush with extra-virgin olive oil, and top each with a leaf of flat-leaf parsley.

Makes: 24

Hawaii Five-Oh


Ingredients

1/4 cup(s) brown sugar
1/2 teaspoon(s) cinnamon
1/4 teaspoon(s) chili powder
3/4 teaspoon(s) vanilla extract
1 peeled and cored pineapple (found in the refrigerated produce section), cut into 5 thick slices
5 onion rolls
5 slice(s) Swiss cheese (enough to cover the bottom half of each bun)
5 slice(s) thick ham, or 10 thin ones
1 cup(s) spinach leaves
Dijon mustard


Directions

1.Combine the brown sugar, cinnamon, chili powder, and vanilla extract in the plastic container that the pineapple came in. Put the sliced pineapple back in the container, pop on the lid, and swirl it around to coat the pineapple in the seasonings. Let the flavors soak in while you preheat the oven to 425 degrees.

2.Arrange the pineapple slices on the greased baking sheet. Roast them for 10 to 12 minutes on each side, using the tongs to flip them, until golden brown. During the last 5 minutes of roasting, heat up the buns in the oven. Put the ham and Swiss on the bottom halves of the buns so the meat heats up and the cheese melts. Then turn off the oven and use the oven mitts to remove the pineapple and the buns.

3.Build the sandwiches: Top each ham-and-cheese bottom bun with a slice of pineapple, then a handful of spinach. Spread Dijon mustard on the top half of each bun. Stack. Munch.

Spicy Pulled Pork


Ingredients

1 medium onion, diced
1 teaspoon(s) dried oregano
2 dried bay leaves
1 chipotle, in adobo sauce, minced
1 tablespoon(s) adobo sauce
1 can(s) (28 ounces) crushed tomatoes
1 can(s) (14.5 ounces) whole tomatoes in puree
2 teaspoon(s) coarse salt
1/2 teaspoon(s) ground pepper
2 3/4 pound(s) boneless pork shoulder, trimmed and halved crosswise
Flour tortillas, lightly toasted, for garnish (optional)
Grated cheddar cheese, for garnish (optional)
Sour cream, for garnish (optional)

Directions
In a 5-quart slow cooker, combine onion, oregano, bay leaves, chipotle, adobo sauce, tomatoes (and puree), salt, and pepper. Add pork; toss to coat with sauce.
Cover; cook on high setting until meat is pull-apart tender, about 6 hours (do not uncover while cooking).

Transfer meat to a large bowl; shred with forks, discarding any gristle. Return meat to pot; toss with sauce.

To serve, discard bay leaves; if desired, garnish with tortillas and cheddar or sour cream.

Quick Marinated Pork


Ingredients

1/2 cup(s) thawed orange juice concentrate
2 tablespoon(s) reduced-sodium soy sauce
2 teaspoon(s) grated fresh ginger
1/4 teaspoon(s) salt
1/4 teaspoon(s) freshly ground black pepper
1 (1 1/4-pound) pork tenderloin


Directions

1.Preheat oven to 475 degrees F. In bowl, combine thawed concentrate, soy sauce, ginger, salt, and pepper. Reserve 1/3 cup sauce for serving. Place remaining sauce in large self-sealing bag with pork tenderloin; refrigerate 10 minutes.

2.Place pork on rack in roasting pan lined with heavy-duty foil; brush pork with some of sauce remaining in bag. Roast 13 minutes; turn pork over and brush again. Roast 13 to 15 minutes longer or until internal temperature reaches 155 degrees F. Let stand 5 minutes before slicing. Serve with reserved sauce.

Muffuletta Sandwich


Ingredients:
1 (10-inch) round Italian loaf of bread
2 cup(s) Olive Salad
1/4 pound(s) Italian salami, thinly sliced
1/4 pound(s) mortadella, thinly sliced
1/4 pound(s) ham, thinly sliced
1/4 pound(s) provolone, thinly sliced

Directions
Make the sandwiches: Cut the bread loaf in half horizontally and scoop out the crumb, leaving a 1-inch border. Discard or save crumb for another use. Spread 1 cup of Olive Salad on bottom half. Place layers of salami, mortadella, ham, and provolone over Olive Salad. Place 1 more cup of Olive Salad over meat and cheese and cover with the top half of the loaf. Wrap tightly in plastic wrap. Place a plate large enough to cover the loaf on top of the sandwich, weight it with two 16-ounce cans or something equally heavy, and refrigerate overnight. Cut loaf into 4 equally sized wedges and serve.


Olive Salad:


1 head(s) (about 6 cloves) garlic, peeled and roughly chopped
1 green bell pepper, quartered
1 red bell pepper, quartered
5 stalk(s) celery, cut in half
1 1/2 pound(s) mushrooms
4 jar(s) (10 ounces each) large pimiento-stuffed olives, drained
2 cup(s) vegetable oil
2 cup(s) white vinegar
2 tablespoon(s) ground black pepper
2 tablespoon(s) lemon pepper
2 tablespoon(s) garlic powder
2 tablespoon(s) onion powder
2 tablespoon(s) sugar
1 cup(s) chopped onion

Directions
Chop the vegetables: In the bowl of a food processor fitted with metal blade, place garlic, red and green bell peppers, celery, mushrooms, and olives. Combine with short pulses until coarsely chopped (this can be done in batches).

Cook the seasonings: In a 2-quart saucepan, combine oil, vinegar, pepper, lemon pepper, garlic powder, onion powder, and sugar over medium-high heat. Bring the mixture to a boil and add onions. Remove from heat and let stand until cooled.

Combine all ingredients: In a large bowl, stir together vegetable and seasoning mixtures until well blended. Cover and refrigerate overnight. Store, refrigerated, for up to 1 month.


Avocado Ham Sandwich


Ingredients:
2 loaf(s) (about 18 inches each) ficelle
1/4 cup(s) butter, softened
2 tablespoon(s) Dijon mustard
1/8 teaspoon(s) coarse black pepper
3/4 pound(s) Virginia ham, sliced
3 large avocados, peeled and sliced

Directions
Cut each ficelle loaf into 3 equal pieces, and split each horizontally along one side, leaving the other side intact. Open the pieces so they lie flat.

Stir the butter, mustard, and pepper together until smooth, and spread on both sides of the bread. Layer with the ham and avocado, and sprinkle with the sea salt.

Wrap the sandwiches with parchment, and tie with a string to secure. Keep chilled and serve within 3 hours.

Pressed Italian Sandwiches


Ingredients
1 ciabatta loaf (about 8 by 14 by 2 in.)
1/2 cup store-bought black or green olive tapenade
2 tablespoons balsamic vinegar
2 tablespoons extra-virgin olive oil
1/4 pound thinly sliced Genoa salami
1/4 pound thinly sliced spicy Italian cold cuts, such as coppa, capocolla, or hot salami
3 ounces thinly sliced prosciutto
8 ounces fresh mozzarella, sliced
1 roasted red bell pepper, chopped
6 leaves fresh basil, torn into bite-size pieces
Freshly ground black pepper
Preparation
1. Cut ciabatta in half lengthwise. Spread bottom half with tapenade. Drizzle cut side of top half with vinegar and oil.

2. Arrange salami on top of tapenade, followed by cold cuts, prosciutto, mozzarella, red pepper, and basil. Sprinkle with pepper to taste and place top half of loaf on filling.

3. Wrap sandwich thoroughly with plastic wrap. Place a heavy cutting board or other flat object on top of sandwich and weight it down with a 2- to 4-lb. weight (such as a large pot or six-pack of soda). Let sit 30 minutes to 2 hours. Unwrap, cut into eighths, and serve.

Down Island Burgers With Mango May & Grilled Onions


Ingredients:
1/4 cup mayonnaise
1/2 cup diced ripe mango
2 teaspoons freshly squeezed lime juice
1 1/2 pounds ground pork
2 tablespoons Sauvignon Blanc
2 tablespoons Tabasco Pepper Sauce
1/4 cup panko (Japanese bread crumbs)
4 large garlic cloves, minced
4 teaspoons minced fresh ginger
4 teaspoons curry powder
1 teaspoon salt
1/2 teaspoon ground allspice
Vegetable oil, for brushing on the grill rack
4 (1/2-inch-thick) sweet onion slices
4 seeded sandwich rolls, split
1 bunch watercress, large stems discarded

Directions:
Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make the mayo, combine all of the ingredients in a food processor and process until smooth.

To make the patties, combine the pork, Sauvignon Blanc, pepper sauce, panko, garlic, ginger, curry powder, salt, and allspice in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 4 equal portions and form the portions into patties to fit the rolls.

When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, 4 to 5 minutes on each side for medium.

While the patties are cooking, place the onions on the grill rack and cook until golden brown and crisp-tender, 2 to 3 minutes per side.

During the last few minutes of cooking, place the rolls, cut side down, on the outer edges of the rack to toast lightly. To assemble the burgers, on each roll bottom, place a patty, an equal portion of the mayo, an onion slice, and a generous amount of watercress. Add the roll tops and serve.

Sausage-and-Zucchini Skillet Lasagna


Ingredients:
3/4 pound(s) Italian pork sausage, casings removed
2 (8-ounce) zucchini, quartered lengthwise and sliced
1 tablespoon(s) olive oil
1 pound(s) part-skim ricotta cheese
White from 1 large egg
8 ounce(s) fresh mozzarella cheese, diced
1/2 cup(s) grated Parmesan cheese
1/4 teaspoon(s) kosher salt
1/4 teaspoon(s) freshly ground pepper
3 cup(s) jarred tomato sauce
8 no-boil lasagna noodles
1/3 cup(s) fresh basil leaves, torn


Directions

Heat oven to 400 degrees F.

Sauté sausage and zucchini in oil in a large nonstick skillet over medium heat 5 to 7 minutes, or until sausage is browned and zucchini tender. Remove skillet from heat; cool slightly.

Combine ricotta, egg white, mozzarella, 1/4 cup of the Parmesan, salt, and pepper. Spread 3/4 cup of the tomato sauce on bottom of a 10-inch ovenproof skillet, preferably cast-iron or nonstick. Top with 2 noodles, long sides touching. Spoon 1/3 each of the sausage mixture, cheese mixture, and basil leaves over noodles.

Assemble 2 more layers, beginning with 2 noodles, then 3/4 cup of the sauce, 1/3 of the sausage mixture, 1/3 of the cheese mixture, and 1/3 of the basil leaves, ending top layer with the last 2 noodles.

Spread the remaining 3/4 cup sauce over top and sprinkle with the remaining 1/4 cup Parmesan. Cover tightly with foil. Bake 35 minutes. Let rest 10 minutes before cutting into wedges.

Slow-Cooker Pork Tacos


Ingredients
3 whole ancho chiles
3 whole pasilla chiles
4 cloves garlic, unpeeled
2 to 3 chipotles in adobo sauce
1/2 medium white onion, roughly chopped
3 tablespoons extra-virgin olive oil
2 tablespoons honey
1 tablespoon cider vinegar
Kosher salt
2 teaspoons dried oregano, preferably Mexican
3 3/4 cups low-sodium chicken broth
4 pounds boneless pork shoulder (untrimmed), cut into chunks
Freshly ground pepper
2 bay leaves
1 cinnamon stick
Corn tortillas, warmed, for serving
Assorted taco toppings, for garnish

Directions
Put the ancho and pasilla chiles and the garlic in a bowl. Microwave on high until soft and pliable, 2 to 3 minutes. Stem and seed the chiles; peel the garlic. Transfer the chiles and garlic to a blender.

Add the chipotles, onion, 2 tablespoons olive oil, honey, vinegar, 1 tablespoon salt and the oregano to the blender; puree until smooth. Heat the remaining 1 tablespoon oil in a large skillet over high heat; add the chile sauce and fry, stirring, until thick and fragrant, about 8 minutes. Pour in the broth and reduce until slightly thickened.

Season the pork all over with salt and pepper and transfer to a large slow cooker. Add the bay leaves and cinnamon stick, then pour in the sauce. Cover and cook on high until the meat is tender, about 5 hours. (Or cook the meat in a large Dutch oven, covered, for 1 hour 45 minutes at 350 degrees; uncover and cook 30 more minutes.)

Discard the bay leaves and cinnamon stick. Shred the pork with 2 forks; season with salt and pepper. Serve the shredded pork in the tortillas, along with toppings.

Gingered Pork and Vegetable Stir-Fry


Ingredients:
1 (whole ) pork tenderloin, about 12 ounces, thinly sliced
2 tablespoon(s) (grated peeled) fresh ginger
1 cup(s) (reduced-sodium) chicken broth
2 tablespoon(s) teriyaki sauce
2 teaspoon(s) cornstarch
2 teaspoon(s) canola oil
8 ounce(s) snow peas, strings removed, fresh or frozen
1 medium zucchini, cut in half lengthwise , and thinly sliced crosswise
3 onions, cut into 3-inch pieces


Directions

Toss pork with ginger in a bowl. Mix broth, teriyaki sauce and cornstarch in a cup; set aside.

In a nonstick 12-inch skillet, warm 1 teaspoon oil over medium-high heat until hot. Add snow peas, zucchini and onions, and stir-fry until lightly browned and tender-crisp, about 5 minutes. Transfer vegetables to large bowl.

In same skillet, heat remaining 1 teaspoon oil; add pork mixture and stir-fry until pork just loses its pink color, about 3 minutes. Transfer pork to bowl with vegetables.

Stir cornstarch mixture to blend; add to skillet and heat to boiling. Boil until sauce thickens slightly, about 1 minute, stirring constantly. Return pork and vegetables to skillet, stir to combine with sauce and heat through. Serve with brown rice, if you like.

Pork and Vegetable Stir-fry


Ingredients:
1 whole(s) pork tenderloin, (about 1 pound)
1 tablespoon(s) rice vinegar
3 tablespoon(s) soy sauce
3/4 cup(s) reduced-sodium chicken broth
1 tablespoon(s) fresh ginger, grated, peeled
1 tablespoon(s) honey
2 teaspoon(s) cornstarch
1 clove(s) garlic, crushed with press
3 teaspoon(s) canola oil
8 ounce(s) snap peas, strings removed from both sides
1 large red pepper, cut into 1/4-inch-thick strips
3 green onions, cut into 1-inch pieces
Cooked brown or white rice


Directions

Cut pork tenderloin crosswise into 3 pieces. Cut each piece lengthwise in half, then cut lengthwise into thin slices.

In medium bowl, toss pork with vinegar and 1 tablespoon soy sauce. In small bowl, mix 2 tablespoons soy sauce with broth, ginger, honey, cornstarch, and garlic until blended. Set aside.

In nonstick 12-inch skillet, heat 1 teaspoon oil over medium-high heat until hot. Add peas, pepper, and green onions and cook 7 to 8 minutes or until lightly browned and tender-crisp, stirring frequently. Transfer vegetables to bowl.
In same skillet, heat remaining 2 teaspoons oil until hot. Add pork mixture and cook about 2 minutes or until pork just loses its pink color, stirring constantly. With slotted spoon, transfer pork to bowl with vegetables.

Stir broth, then add to skillet; heat to boiling. Boil 1 minute or until slightly thickened. Return pork and vegetables to skillet; stir until heated through. Serve with rice if you like.

Chicago Deep-Dish Sausage Pizza


Ingredients
1 lb bulk Italian pork sausage
1⁄2 cup chopped green bell pepper
1 cup sliced fresh mushrooms (3 oz)
1 can (8 oz) pizza sauce
1 can (13.8 oz) Pillsbury refrigerated classic pizza crust
1 1⁄2 cups shredded mozzarella cheese (6 oz)
2 medium plum (Roma) tomatoes, chopped
1⁄4 cup sliced ripe olives, if desired
2 tablespoons chopped green onions (2 medium)

Preparation

1. Heat oven to 400°F. Spray 9-inch square pan with cooking spray. In 10-inch nonstick skillet, cook sausage and bell pepper over medium-high heat 7 to 9 minutes, stirring frequently, until sausage is no longer pink. Stir in mushrooms and pizza sauce. Keep warm over low heat.

2. Unroll dough; place in pan. Starting at center, press out dough to edges of pan, pressing up and at least 1 inch up sides, folding edge under to form crust. Sprinkle 1/2 cup of the cheese evenly in bottom of crust. Spoon hot sausage mixture over cheese. Top with remaining 1 cup cheese, the tomatoes and olives.

3. Bake 15 to 20 minutes or until crust is golden brown. Sprinkle with onions. Let stand 5 minutes before cutting.

Spicy Sausage Jambalaya


Ingredients:
8 ounce(s) turkey andouille sausage, sliced 1/4 inch thick
1 green or yellow pepper, chopped
1 can(s) (14 1/2-ounce) stewed tomatoes
1 cup(s) uncooked instant brown rice
8 ounce(s) chicken tenders, each cut crosswise in half
1 bunch(es) green onions, sliced

Directions

1. Heat 12-inch skillet on medium until hot. Add sausage and pepper, and cook 5 minutes, stirring occasionally.

2. Stir in tomatoes with their juice, rice, chicken, 1/2 cup water, and 1/4 teaspoon salt; heat to boiling on high. Reduce heat to low; cover and simmer 10 minutes or until rice is just tender. Remove skillet from heat; stir in green onions.

Pepperoni Stromboli


Ingredients:
2 loaves (1 pound each) frozen bread dough, thawed
2 eggs, beaten
1/3 cup Crisco® Light Olive Oil
1/2 teaspoon each garlic powder, salt and pepper
1/2 teaspoon ground mustard
1/2 teaspoon dried oregano
1 pound ground beef, cooked and drained
1 package (3-1/2 ounces) sliced pepperoni
2 cups (8 ounces) shredded mozzarella cheese
1 cup (4 ounces) shredded cheddar cheese
1 small onion, chopped

Directions:
Place each loaf of bread dough in a greased large bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes. Punch down. Roll each loaf into a 15-in. x 12-in. rectangle.

In a small bowl, combine eggs, oil and seasonings. Brush over dough to within 1/2 in. of edges; set remaining egg mixture aside. Arrange beef, pepperoni, cheeses and onion on dough to within 1/2 in. of edges. Roll up, jelly-roll style, beginning with a long side. Seal the edges well.

Place seam side down on greased baking sheets. Brush with remaining egg mixture. Bake at 3757° for 30-35 minutes or until lightly browned. Let stand for 5-10 minutes before cutting. Yield: about 16 servings.

Pork Chops Marsala


Ingredients:
4 (4-ounce) boneless pork loin chops, trimmed of fat
1/2 teaspoon(s) salt
1/4 teaspoon(s) ground black pepper
3 teaspoon(s) olive oil
1 package(s) (10-ounce) sliced cremini or white mushrooms
1 large shallot, chopped
1/2 teaspoon(s) dried thyme or 1 1/2 teaspoon fresh thyme leaves
1 pound(s) asparagus, ends trimmed
1/2 cup(s) reduced-sodium chicken broth
1/3 cup(s) Marsala wine


Directions

1. Evenly season pork chops, on both sides, with 1/2 teaspoon salt and 1/4 teaspoon ground black pepper.

2. In 12-inch nonstick skillet, heat 2 teaspoons oil on medium 1 minute. Add chops and cook 6 minutes or until browned on the outside and still slightly pink in the center, turning over once. Transfer chops to platter; keep warm.

3. In same skillet, heat remaining oil 1 minute. Add mushrooms, shallot, and thyme; cook 5 minutes or until mushrooms are browned and shallot is softened.

4. Meanwhile, place asparagus in glass pie plate with 2 tablespoons water; cover and cook in microwave on High 3 to 3 1/2 minutes or until fork-tender. Set aside.

5. Add broth and wine to mushroom mixture; cook 2 minutes. Place chops on 4 dinner plates; top with wine sauce. Serve with asparagus and, if you like, rice.

Apple-Ginger Glazed Ham


Ingredients:
4 pound(s) fully cooked smoked whole ham
1 cup(s) apple jelly
1 teaspoon(s) ground ginger
Fresh herbs for garnish


Directions

1. Preheat oven to 325 degrees F. Remove skin and trim some fat from ham, leaving about 1/4" fat covering.

2. Place ham on rack in large roasting pan (17" by 11 1/2"). Insert meat thermometer into center of ham, being careful that pointed end of thermometer does not touch bone. Bake ham 2 1/2 hours.

3. After ham has baked 2 1/2 hours, prepare glaze: In small saucepan over medium-high heat, heat apple jelly and ginger to boiling; boil 2 minutes. Brush ham with some glaze. Bake ham 30 minutes to 1 hour longer, brushing occasionally with remaining glaze until thermometer reaches 140 degrees F. (15 to 18 minutes per pound total cooking time).

4. When ham is done, place on large platter; let stand 20 minutes for easier slicing. Garnish with fresh herbs.

Barbecued Pork Sandwich

Makes 2 servings, about 1 cup filling each

ACTIVE TIME: 15 minutes

TOTAL TIME: 15 minutes (not including pork marinating & grilling)

EASE OF PREPARATION: Easy

1 small yellow onion, cut into 1/2-inch-thick rounds
1 teaspoon canola oil
2 whole-wheat buns, split horizontally
Chipotle-Marinated Pork Tenderloin, grilled (recipe follows), thinly sliced 
1/3 cup prepared barbecue sauce

1. Preheat grill to high or heat a large indoor grill pan over high heat. Lightly brush onion with oil and grill (after the pork is done) until lightly browned and soft, turning once, 4 to 5 minutes. Let cool on a cutting board.

2. Lightly toast buns cut side down on the grill or in the pan. 

3. Chop the onion; transfer to a large bowl. Shred pork using two forks; add to the bowl. Add barbecue sauce; stir to combine. Serve the pork filling on the toasted buns.

Maple-Glazed Pork Medallions


Makes 4 servings

1 teaspoon chili powder
1/2 teaspoon salt
1/8 teaspoon ground chipotle pepper 
1 pound pork tenderloin, trimmed and cut crosswise into 1-inch-thick medallions

1 teaspoon cider vinegar

1. Mix chili powder, salt and ground chipotle in a small bowl. Sprinkle over both sides of pork.

2. Heat oil in a large skillet over medium-high heat. Add the pork and cook until golden, 1 to 2 minutes per side. Add cider, syrup and vinegar to the pan. Bring to a boil, scraping up any browned bits. Reduce the heat to medium and cook, turning the pork occasionally to coat, until the sauce is reduced to a thick glaze, 1 to 3 minutes. Serve the pork drizzled with the glaze.
