Sweet and Sassy Nuts


Ingredients:
1 large egg white
1/2 cup(s) sugar
1 teaspoon(s) ground cumin
3/4 teaspoon(s) ground chipotle chile pepper
1/2 teaspoon(s) ground cinnamon
3 can(s) (10 to 11 ounces each) salted fancy mixed nuts


Directions

1.Preheat oven to 350 degrees. Lightly grease two 15 1/2" by 10 1/2" jelly-roll pans with vegetable oil, or spray with nonstick cooking spray.

2.In large bowl, with wire whisk, beat egg white until foamy. Add sugar, cumin, chipotle pepper, and cinnamon, and beat until well combined. Add nuts to egg-white mixture; with rubber spatula, stir until well coated.

3.Spread nut mixture evenly in prepared jelly-roll pans. Bake on 2 oven racks 20 to 25 minutes or until coating on nuts is golden-brown and dry, stirring once and rotating pans between upper and lower racks halfway through baking for even browning.

4.Cool nuts completely in pans on wire racks, at least 1 hour. With hands, break apart any large clusters of nuts when cool. Store cooled nuts in tightly sealed containers at room temperature up to 2 weeks.

Adobo Chicken Wrap


Ingredients:
1 tablespoon(s) mayonnaise
1 teaspoon(s) finely chopped chipotle peppers in adobo sauce
1 (8-inch) whole-wheat tortilla
1 slice(s) reduced-fat sharp Cheddar cheese slice, cut in half
1 lettuce leaf
2 tablespoon(s) pico de gallo
6 slice(s) Oscar Mayer® Deli Fresh Shaved Rotisserie Seasoned Chicken


Directions

1.Mix dressing with peppers; spread onto tortilla.

2.Top with remaining ingredients; roll up.

Super Bowl Special: Creamy Artichoke Dip


In a food processor, whirl together until blended and artichokes break into small pieces:



1/2 lb. cream cheese2 oz. thawed frozen artichoke hearts1/3 cup freshly grated parmesan cheese1 tbsp. chopped flat-leaf parsley2 tsp. fresh lemon juice1/2 tsp. each salt and freshly ground black pepper1/4 tsp. finely shredded fresh lemon zest1 small finely chopped garlic cloveMakes: 1½ cups

Super Bowl Special: Sausage Mushroom Caps


Rinse 24 medium-size button or cremini mushrooms (about 1 lb. total). Trim stems; save for another use.

Mix 1/3 lb. seasoned bulkpork sausage with 3 tbsp. seasoned dried bread crumbs. Mound sausage mixture in mushrooms, then set, filled side up, in a rimmed 10- by 15-in. baking pan.

Broil 6 to 7 in. from heat until sausage is well browned, about 5 minutes. Lift mushrooms onto a platter, brush with extra-virgin olive oil, and top each with a leaf of flat-leaf parsley.

Makes: 24

Super Bowl Special: Creamy Pasta Salad with Celery


Ingredients:
1 pound(s) medium pasta shells
Coarse salt and ground pepper
1 cup(s) light mayonnaise
1/3 cup(s) fresh lemon juice
6 stalk(s) celery, halved lengthwise and thinly sliced crosswise, plus 1 cup celery leaves
1/2 medium red onion, finely chopped


Directions

1.Cook pasta in a large pot of boiling salted water until al dente; drain and rinse under cold water to stop cooking. Set aside.

2.In a large bowl, whisk together mayonnaise and lemon juice. Add celery stalks and leaves, onion, and cooled pasta; season with salt and pepper. Toss to combine.

Super Bowl Special: Hot Spinach Dip


Ingredients:
2 teaspoon(s) olive oil, plus more for baking dish
1 medium onion, diced
2 clove(s) garlic , minced
2 pound(s) spinach, cleaned, trimmed, and coarsely chopped
1/2 cup(s) milk
6 ounce(s) reduced-fat bar cream cheese
3 dash(es) Worcestershire sauce
3 dash(es) hot sauce, such as Tabasco
3/4 cup(s) shredded mozzarella
Coarse salt and ground pepper
Baguette slices, breadsticks, or crackers, for serving


Directions

1.Preheat oven to 425 degrees. In a Dutch oven or large pot, heat oil over medium. Add onion and garlic; cook until lightly browned, 5 to 8 minutes.

2.Add spinach in two additions, letting the first batch wilt before adding the next; cook until completely wilted, 5 to 8 minutes. Transfer to a colander; drain, pressing to release all excess liquid.

3.In the same pot, warm milk over high heat. Whisk in cream cheese until melted, about 3 minutes. Add spinach, Worcestershire sauce, hot sauce, and 1/4 cup mozzarella; stir to combine. Season with salt and pepper. Pour into a lightly oiled 1 1/2-quart shallow baking dish; sprinkle with remaining 1/2 cup mozzarella.

4.Bake until bubbly and golden brown, 20 to 25 minutes. Serve hot with accompaniments, as desired.

Super Bowl Special: Pigs in a Blanket


1 tablespoon(s) olive oil
1 large onion, thinly sliced crosswise
2 pound(s) (about 60) mini hot dogs (we use turkey dogs)
Cheddar cheese (optional), cut into small pieces
1 large egg
All-purpose flour, for work surface
1 box(es) (17 1/2-ounce) frozen puff pastry, thawed
Poppy, sesame, or mustard seeds, optional
Mustard, for serving
Ketchup, for serving


Directions

1.Prepare caramelized onions for filling (optional): In a medium skillet over medium heat, heat olive oil. Add onions and cook, stirring occasionally, adding a little bit of water as necessary if onions begin to stick, until deep golden brown, about 30 minutes. Set aside to cool.

2.Cut hot dogs lengthwise 3/4 of the way through. Insert a piece of cheese or 1/2 teaspoon caramelized onions into each hot dog, if using; set aside. If not using cheese or onions, poke hot dogs several times with the tip of a knife.

3.On a lightly floured work surface, working with one sheet of puff pastry at a time, roll into a 14-by-11-inch rectangle. Cut lengthwise into seven 1 1/2-inch wide strips. Cut each strip crosswise into 4 rectangles, each about 3 1/2 inches long.

4.In a small bowl, beat together egg and 1 tablespoon water; set aside. Line baking sheets with parchment paper or a nonstick baking mat; set aside. Place a hot dog on the narrow end of one piece of pastry. Roll to enclose, brushing with some of the beaten egg to adhere; transfer to prepared baking sheet. Repeat process with remaining hot dogs and pastry. Brush the tops of puff pastry with egg and sprinkle with seeds, if using. Transfer to refrigerator and let chill for 15 minutes.

5.Preheat oven to 450 degrees.

6.Transfer baking sheets to oven and bake until puffed and golden, about 20 minutes. Let cool briefly before serving with mustard and ketchup.

Philadelphia Cheese Steak

Ingredients

1/4 cup(s) vegetable oil
4 medium (about 1 1/4 pounds) onions, thinly sliced
1 1/2 pound(s) boneless sirloin, cut into 1/2-inch-wide strips
1/4 teaspoon(s) chili powder
1/4 teaspoon(s) ground black pepper
1 teaspoon(s) salt
2 teaspoon(s) Worcestershire sauce
2 teaspoon(s) molasses
2 clove(s) garlic
2 (about 12 ounces) red bell peppers, thinly sliced
2 (about 12 ounces) green bell peppers, thinly sliced
4 small (about 6 inches long) Italian or French loaves of bread, split open
1/2 cup(s) shredded mozzarella cheese
1/2 cup(s) shredded provolone cheese


Directions

1.Prepare the meat filling: In a large nonstick skillet, heat oil over medium heat and sauté onions and sirloin until onions are soft -- about 3 minutes. Add chili powder, pepper, salt, Worcestershire, molasses, and garlic and cook for 5 minutes, stirring occasionally. Add red and green peppers and cook 3 more minutes.

2.Assemble the sandwiches: Preheat oven broiler. Fill each loaf with 2 cups of meat mixture and sprinkle with 2 tablespoons mozzarella and 2 tablespoons provolone. Place under broiler until cheese melts -- 30 seconds to 1 minute.

Hawaii Five-Oh


Ingredients

1/4 cup(s) brown sugar
1/2 teaspoon(s) cinnamon
1/4 teaspoon(s) chili powder
3/4 teaspoon(s) vanilla extract
1 peeled and cored pineapple (found in the refrigerated produce section), cut into 5 thick slices
5 onion rolls
5 slice(s) Swiss cheese (enough to cover the bottom half of each bun)
5 slice(s) thick ham, or 10 thin ones
1 cup(s) spinach leaves
Dijon mustard


Directions

1.Combine the brown sugar, cinnamon, chili powder, and vanilla extract in the plastic container that the pineapple came in. Put the sliced pineapple back in the container, pop on the lid, and swirl it around to coat the pineapple in the seasonings. Let the flavors soak in while you preheat the oven to 425 degrees.

2.Arrange the pineapple slices on the greased baking sheet. Roast them for 10 to 12 minutes on each side, using the tongs to flip them, until golden brown. During the last 5 minutes of roasting, heat up the buns in the oven. Put the ham and Swiss on the bottom halves of the buns so the meat heats up and the cheese melts. Then turn off the oven and use the oven mitts to remove the pineapple and the buns.

3.Build the sandwiches: Top each ham-and-cheese bottom bun with a slice of pineapple, then a handful of spinach. Spread Dijon mustard on the top half of each bun. Stack. Munch.

Pizzazz Pizza Pita


Ingredients

1 pita round, cut in half
1/4 cup(s) marinara sauce
1 cup(s) grated mozzarella cheese
Your favorite pizza toppings



Directions

1.Preheat the oven to 350 degrees. Spread marinara sauce inside the pita pockets. Stuff them with cheese and your choice of extras, and lay them on the baking sheet. (FYI, if you’re using pepperoni, five per pocket is the perfect amount.)

2.Bake for 10 to 15 minutes or until gooey cheese is oozing out of the pockets. Turn
off the oven and use the oven mitts to remove the baking sheet. Let your Pizzazz Pizza Pitas cool a bit before you take a big bite—I’m sure you know the agony of pizza burns
